A Slimming World friendly recipe that is fab for breakfast or lunch!
4 large eggs
1 bag baby spinach (chopped)/frozen spinach
1/2 green bell pepper (chopped)
50g diced onion (can use from frozen)
Slices of cooked ham or roughly shredded gammon
- Sautee onion, spinach and bell pepper (I use frylight for all my frying) in a large frying pan
- Whisk eggs until slightly frothy and add to the frying pan
- Leave on the hob on a medium heat to partially set for a minute before using whisk to separate
- When egg is cooked through serve with a side of ham or gammon.
