Green eggs and ham (a 5 steps or less recipe)

A Slimming World friendly recipe that is fab for breakfast or lunch!

Serves 2

Ingredients:

4 large eggs

1 bag baby spinach (chopped)/frozen spinach

1/2 green bell pepper (chopped)

50g diced onion (can use from frozen)

Slices of cooked ham or roughly shredded gammon

  1. Sautee onion, spinach and bell pepper (I use frylight for all my frying) in a large frying pan
  2. Whisk eggs until slightly frothy and add to the frying pan
  3. Leave on the hob on a medium heat to partially set for a minute before using whisk to separate
  4. When egg is cooked through serve with a side of ham or gammon.
